Healthy Cashew Sauce


Ingredients
1.5 cups cashews
1.5 cups water
2 tsp lime juice
1 TBS brown sugar
1 garlic clove (or two)
1/4 bunch cilantro chopped
salt to taste

Directions
Blend in food processor.

I found the recipe for this sauce at a healthy eating class at work. Using water instead of oil takes out a lot of calories. Use this sauce over stir fry or veggie quinoa dish. You can also throw together your leftovers and add this sauce. Rice/quinoa + beans + veggies + cashew sauce = fast, cheap and healthy dinner!
